Trying out some of the casseroles I made. This one worked pretty well.
Easy recipe. Makes enough for one good appetite or two medium ones.
1 Cup cut up squash, pumpkin or turnip, your choice.
1 carrot cut up.
1 turkey thigh
salt, pepper, olive oil,chopped or powdered garlic.
Put in casserole, vegetables first then turkey, drizzle with olive oil and sprinkle salt pepper and garlic on top. Basil can also be added if you like. Bake covered at 350 degrees F about an hour or until turkey is no longer pink inside, then uncover last 10 minutes until brown. Remove from oven and enjoy!
